Stuffing on the BGE.

Since all the stuffing is likely gonna fall out when I spatchcock my turkey, does anyone have thoughts on doing stuffing in a foil pan on the egg?

Ingredients

Long Hot Peppers;

Olive Oil;

Garlic;

Bacon;

Little Smokies;

Cheddar Cheese;

Rub.

Instructions

Fry long hot peppers in a generous amount of olive oil with a lot of whole garlic, cool, cut peppers into one square inch pieces, cut bacon slices into thirds, lay a square of pepper onto a piece of bacon, put on a Little Smoky (either the cheddar filled or plain & add your own cheddar cheese), season to taste, roll up, then roll each one around in the hot pepper oil, add more seasoning to the outside, put a toothpick in, then pop on the egg till bacon is crispy.  They can be done either direct, indirect, with or without smoking chips/chunks, whatever you want

This is a great dish for when the weather starts to warm up. VERY ADDICTIVE!

Caesar BLT Pasta Salad
(adapted from Food Network)

16 oz. mini farfalle (bowties)
1 lb. bacon
1 pint sugar plum tomatoes, sliced
1 c. Gardini’s Caesar dressing
1/2 c. parmesan
1 clove garlic, minced
1/4 c. olive oil
Juice of one lemon
4 c. chopped romaine lettuce

Cook the pasta in a large pot of salted water to al dente, then drain. (I cooked mine the night before and tossed it with the olive oil and lemon juice and marinated it in the refrigerator overnight.) This keeps the pasta from sticking together.

Cut the bacon into bite size pieces and cook in a large skillet until crisp. Drain on paper towels. Discard the bacon grease; leaving just a tablespoon or so in the skillet. Add the sliced tomatoes and minced garlic and toss in the skillet for just a couple of minutes to cook the garlic and soften the tomatoes. Remove from heat and let sit until cool.

Since the pasta is nice and cold from being refrigerated overnight; just mix in the Caesar dressing, bacon, tomato mixture, olives and Parmesan, then toss in the chopped lettuce at the end and it’s ready to go! Serve at room temperature.

Looking for a Simple Easy Baked Beans Recipe

Some friends are coming in from St Louis and staying a campground on beautiful Lake Guntersville, AL for the weekend. The wife and I are meeting them tonight at 6 and we are supposed to bring a side. I volunteered for baked beans. I would really like to smoke some for an hour on the BGE instead of just bringing the basic canned ones cooked on the stove. At the same time, I will be limited on time...Campground is 30 minutes from my house and with an hour long smoke I wont have much time at all for prep.

I have done a very complex smoked baked beans recipe from Steve Raichlen but it involves a lot of ingredients and prep. I'm looking for something with very little prep and small amount of ingredients. I'm thinking something along the lines some canned baked beans, chopped jalepenos, onion, and garlic, brown sugar, bottled red sauce, and bacon. I can probably just add any combo of said ingredients and be alright but I'd like a simple similar recipe with exact amounts of each ingredient. TIA!

How long to bake potatoes at 275-300?

I plan on cooking ribs tomorrow afternoon and serving with baked potatoes and sweet corn.  How long should I plan for the potatoes if the Egg is already chugging along at 275-300?

Corn and Stuffed Peppers

Cooked some corn and stuffed jalapenos yesterday afternoon. Indirect at 375 maybe 30 minutes. Should have taken the corn off a little sooner it turned out a bit dry. Peppers were perfect! I stuffed the peppers with Pawley's Island Palmetto Cheese with Jalapenos. This is some of our favorite Pimento cheese.

Who doesn't like Stuffing? You won't like this...

ROASTED CORN SALSA

Ingredients
  • 4 Ears Corn
  • 2 Tomatoes, Chopped
  • 1 Small Red Onion, Chopped
  • 1 Red Bell Pepper, Chopped
  • 1 Avocado, Diced
  • 1 Handful Fresh Cilantro Chopped
  • 2 Tbsp Lime Juice (from lime)
  • 2 Tsp. Cumin
  • 2 Tbsp Olive Oil
  • 1 jalapeno pepper Diced
  • Cayenne Pepper to taste

Barbecue Baked Beans - Fabulous!

We have had our BGE for 3 weeks and my husband bought me the BGE Cookbook.  I am anxious to try many of the recipes.  Yesterday we cooked chicken thighs and I decided to try the Barbecue Baked Beans recipe.  It was outstanding!  Very easy to prepare, just assemble all of your prepped ingredients and except for the bacon and onions getting some upfront cooking you dump everything else in at one time.  After the final 30 minutes of cooking, we took the Dutch Oven off of the BGE until later when our guests arrived.  We put the pot back on the EGG for awhile as the EGG was cooling.  When it was time for dinner the beans developed a beautiful deep color and everyone raved about the flavor!  One other note I did make the homemade BBQ Sauce from the book as well - the beans call for 3 cups of the sauce.  It was delicious on its own.

Mac and cheese on the egg help

Doing some homemade Mac and cheese tonight and 
plan on 350 indirect for 30-40 mins
My question is, what kind of wood should I use?
i was thinking some sticks of cherry.  
I was also going to cook some homemade BBQ sauce based on the Dinosaur BBQ recipe at the same time to get some of the smoke flavor into the sauce.  It does call for an optional liquid smoke addition, by why not the real thing?

Adult Mac N Cheese

Last night I cooked this for the current Throwdown going on, but I think it may have got missed by some so I thought I would share it in my own post.  Is was a labor of love.  Took longer to prep everything then to cook it.  First cooked the bacon while I also cooking the shells.  After the bacon was done I use some of the fat to cook red & yellow bell peppers and garlic.  Then added all the cheeses; Italian blend, Colby Jack, Sharp Cheddar, cream cheese and Parmesan cheese.  Last to go in was the smoked chicken, bacon and sun dried tomatoes.   It was very good and I had it for lunch today too.  You still have time to enter.

Watching the Packer game today, having some beers and relaxing on a great WI Fall day. It was a great day...

Parboiled the peppers and had on indirect heat at 425 for about 25 minutes. Stuffed with as followed:  Orzo, sweet Italian sausage, diced tomatoes, garlic, onion, and pepper jack cheese.

I got bored and hungry. 

@smbishop posted a great link for bacon wrapped stuffing balls. Didn't have bacon, but I had some oil and a wok. 

I procured all the left over dressing from my mom last night. Balled it up and dropped in 350 ish oil until browned. I love the sledge pieces on the dressing for the crust. This was Effen awesome!

Baked Beans for 40 folks

Been tasked with cooking baked beans for 40 folks next week.  Have never cooked for that many and don't want to miss the mark.  Anyone have a go to recipe for baked beans to go with BBQ and slaw for that many??  need some help!!!  Want it to be top shelf like I expect the BBQ to be.
